4 Easy Breakfast Recipes to Try

They say breakfast is the most important meal of the day, but it's also one of the hardest to find new ideas. If you're looking to spice up your breakfast, try one of these easy and primarily healthy breakfast recipes. 

Overnight Oats 

If you're the type of person who likes to plan your days the night before, then you'll want to give overnight oats a try. Start by creating the oat base by adding ½ cup uncooked oats, ¼ cup of Greek yogurt, and ¼ of milk or a milk substitute to a mason jar. Next, add in one tablespoon of pure maple syrup and ½ teaspoon of cinnamon. Stir all the ingredients together in the jar and place the jar in the fridge for at least 6 hours, but it tastes best if it can sit overnight. 

When you're ready to eat the oats, you can eat the oat base plain, or you can add a handful of your favorite fruits. Some great options include fresh or frozen blueberries, strawberries, blackberries, or raspberries. You can add a tablespoon of peanut butter, almond butter, or cashew butter for additional flavor.

Veggie Frittata

If you want a breakfast that will produce leftovers, try making a veggie frittata. Start by preheating your oven to 400 degrees. Then whisk together 6 to 8 eggs (or use an egg substitute) with ¼ cup of unsweetened almond milk and two cloves of minced garlic. Set the mixture aside. 

Heat one tablespoon of olive oil in a large cast-iron skillet (or any skillet that can go in the oven). Next, chop up any favorite vegetables and cook them on the skillet until they're tender. You can use broccoli, peppers, spinach, carrots, or any other vegetable you enjoy. Once the vegetables are tender, add the egg mixture to the pan and gently shake the pan to mix the eggs and vegetables. Lastly, place the skillet in the oven for 15 minutes or until the eggs are set. You can enjoy the frittata as soon as it's baked or store it in the fridge and enjoy it throughout the week. 

Berry French Toast

Try berry French toast if you want to start your day with something sweet but still semi-healthy. In a large bowl, whisk together four large eggs (or an egg substitute), 1 cup of almond milk, ¼ cup of orange juice, one teaspoon of vanilla and almond extract, and one teaspoon of cinnamon. Next, coat eight slices of thick-cut bread with the egg mixture (sourdough or whole-grain work best). Cook the coated pieces of bread on a large skillet for 2-3 minutes on each side or until the bread is golden brown. Remove from the skillet and set aside. 

In a blender or food processor, puree 2 cups of your favorite berries. Pour the puree over the French toast with a dash of cinnamon. Additional toppings of maple syrup and whip cream are optional, but be careful not to overload yourself with sugar.

Zucchini Fritter Benedict 

If you want to spice up your egg benedict, fry a zucchini fritter benedict. Start by making the zucchini fritters by adding one large zucchini, one small sweet potato, and one medium carrot into a food processor. Remove the vegetables from the food processor and squeeze out any excess water. Next, put the drained vegetable into a large bowl and mix in 3 minced cloves of garlic, two large eggs, ½ cup of rice flour, and ¼ cup of olive oil. Form the mixture into small patties and cook over medium heat for 5-8 minutes on each side or until crispy. Once you've made the fritters, toast, and butter, both halves of an English muffin. Place your choice of cheese on the muffin, then add the fritter. Top your benedict off with a poached or fried egg and some premade hollandaise or dressing.
